We finally took the time to make Mom's AMAZING, DELICIOUS, DELECTABLE CINNAMON ROLLS for Easter, and they were TO-DIE-FOR! The pictures we posted sparked a lot of interest in the recipe, so here you go!
By the way, this recipe is from our mother, who got it from her mother, who got it from her mother...
1 1/2 c warm water
1 pkg (2 T) dry yeast
2/3 c sugar
1 1/2 t salt
2/3 c room temp. butter
1 c lukewarm mashed potatoes
7 or so c flour
The key to the best rolls is to use the BEST ingredients (i.e.: real organic butter, golden potatoes- peeled, of course- good quality vanilla in the icing, etc...).
Dissolve yeast in 1/2 c water, then add remaining 1 cup of water and rest of ingredients in the order listed. Add flour slowly, until the dough is easy to handle. Knead on lightly floured surface until smooth and elastic- about 5 minutes. Place in a greased bowl, cover, and let rise until double (takes a couple hours- dough is ready if indentation remains when touched).
Creating the Rolls:
Punch down dough, flatten with rolling pin into a rectangle, 15 x 9 inches, on lightly floured surface. Lather rolled dough with butter (maybe 1/4 cup) and a cinnamon sugar mixture (1/2 c. sugar and 4 t. cinnamon). Add 1/2 cup chopped nuts or raisins if you like. For a more caramel like center, you can melt the butter with 1/2 c. packed brown sugar. You choose, experiment, and have fun with the filling part!
Roll up dough tightly, beginning at long side. Pinch edges of dough intro roll to seal. Stretch roll to make it even across.
Cutting the Rolls:
You can use dental floss or a thick thread to cut the rolls evenly into 1 1/2 inch slices. Place rolls slightly apart in greased rectangular pan. Cover and let rise again until double (about 1 hour).
Bake at 400° until golden brown, 12-15 minutes.
Two options for glaze:
1. Icing- Mix 2 cup powdered sugar, 2 T milk and 1 t. vanilla until smooth and of desired consistency. Pour over rolls when hot.
2. Cream Cheese Glaze (our favorite):
1 package cream cheese, softened
1 cube butter, softened
3 c powdered sugar
1 T milk
1 t vanilla
Mix all ingredients together well with hand beaters or mixer. Add sugar slowly, just so as not to have the powder flying all over the room! Lather all over rolls when hot.
Makes about 15 rolls. ENJOY! They are SO tender, melt-in-your-mouth yummy!
